I Eat Cake for Breakfast Everyday

Yep, you read that right. Decadent, moist, chocolate cake in the morning, every single day. I'm one of those people that can literally eat the same thing every day if it's something I like. The whole would you rather that involves having the same food everyday isn't a difficult choice for me. So, chocolate cake every morning? I'm good!
The mornings are the most important part of my day. What goes on sets the tone for my day and if great, usually sets me up for success. I'm a major foodie at heart and I confess, I'd much rather just eat the food than make it. Thinking of what to make, shopping for ingredients, putting it together, and cleaning up is not really my cup of tea. I need something quick and delicious especially in the morning while I'm getting myself and another little person ready for the day.
I not only like this because it takes 5 minutes to make, but because it's nutritious, and comforting. This cake is packed with more than 30g of protein, 19g of fiber, zero artificial sugar, and is 100% plant based. I eat this before or after a workout, and it serves to fuel or replenish. If you know me, I'm hungry all the time, and this keeps me satisfied until lunch.
Ok, ok, here's the recipe! These ingredients are approximations and by all means do not need to be exact. It's a more play by eye type of situation.
Fudgy Chocolate Cake
2 scoops (~3 2/3 tbsp) protein powder of choice.

1 scoop (~1 2/3 tbsp) cacao or unsweetened cocoa powder
1 tsp baking powder
3 tsp chia seeds (optional)
2 tsp coconut oil
1/4 cup plant based milk (I've used oat, soy, almond/cashew blend). Add the milk slowly while stirring. Batter should be fairly chunky and thick. Add more slowly if needed.
Combine ingredients in a bowl (I find this is way easier than in a mug) without over mixing. Microwave time will vary depending on the type of bowl you use (glass, ceramic, etc.). Start with 1.5 minutes and check consistency. I typically microwave for about 1:55. You'll figure out what works!
Add whatever makes your heart happy. I love topping with almond milk creamer (I use Silk Caramel), a little sprinkle of sea salt, and the occasional berry.
